Chicken Taquitos

You Need:
shredded chicken (either rotisserie or your chicken preference)
1 can black beans, drained (we do a lot of this type of food, so I soak a bag of dried black beans)
1 can corn niblets
1 cup salsa
cheese, either straight cheddar or Mexican blend
cilantro, chopped
chopped jalapeno, optional (my family likes it spicy)
cumin
pepper
egg roll wrappers

You will cook your chicken, then shred it. In a mixing bowl, toss together your ingredients, then place a spoonful in the middle of your wrapper and roll as shown. They are cooked in a 375* oven for about 25min or till tanned. We didn’t even have a sour cream dip and these babies disappeared!!

My husband loves chicken taquitos!
These were so easy and you could make a batch without meat 🙂 The girls would have fun rolling them up for you.
